Churros with chocolate sauce

There is nothing more Spanish for breakfast than churros with hot thick chocolate. Especially consumed during the holiday season, indulge your guests with these delicious irresistible bites that are dipped into your homemade chocolate sauce.

Serves: 4

Time: 1 hour

For your churros

  • 50g butter, melted
  • 1/2 tsp vanilla extract
  • 250g plain flour
  • 1 tsp baking powder
  • 1 litre sunflower oil
  • Few chunks of bread

For your sauce

  • 200g bar dark chocolate, not too bitter, broken into chunks
  • 100ml double cream
  • 100ml whole milk
  • 3 tbsp golden syrup
  • 1/2 tsp vanilla extract

For your cinnamon sugar

  • 100g caster sugar
  • 2 tsp cinnamon

Method

  • Pour 350ml boiling water into a jug and add your melted butter and 1/2 tsp vanilla extract. Sift your flour and 1 tsp baking powder into a large bowl and add a pinch of salt.
  • Make a hole in the middle of the bowl and pour in the contents of your jug, quickly beating together until you are left with a smooth mixture without lumps. Leave to rest for 10-15 minutes.
  • To make your sauce, gently melt together the chocolate, cream, milk, golden syrup and vanilla extract in a pan. You should be left with a shiny and smooth sauce, which you can keep warm over a low heat.
  • Take a large deep saucepan and fill it to around a third with sunflower oil. You should get the oil hot enough that a cube of bread will become brown in 45-60 seconds. Line a tray with kitchen paper and mix together your caster sugar and cinnamon.
  • Take a piping bag and fix a star nozzle 1.5-2cm in diameter to it. Fill the bag with your dough then pipe 2-3 strips straight into your hot oil, using a pair of scissors to snip each strip. Cook in the oil until golden brown then take the strips out using a slotted spoon and allow them to drain on the tray with kitchen paper.
  • Sprinkle the churros with cinnamon sugar and cook the rest of your dough. Once you have all of your churros, toss with the remainder of the cinnamon sugar and serve with your chocolate sauce on the side.
