The salad to try this January

Simple but packed with the tasty Manchego cheese flavor, this salad is the perfect weekday dinner. If you feel that Dry January is not your thing, this pairs great with Cordon Negro.

Green Salad with manchesgo cheese and walnuts

Serves: 4, Time: 10 mins

This salad combines some intriguing ingredients to deliver a simple yet delicious dish.

For your salad

  • 1 head green or red leaf lettuce
  • 125g sun dried tomatoes in oil
  • 125g walnuts, chopped
  • 125g Manchego cheese, grated
  • Rice wine vinegar
  • Extra virgin olive oil

1. Tear your washed and dried lettuce into pieces and arrange it on a platter or in a large bowl.
2. Slice the sun dried tomatoes into strips, then add to the lettuce along with your chopped walnuts and grated cheese.
3. Drizzle rice wine vinegar and extra virgin olive oil to dress and you're ready to serve.
