These fun pancakes are pretty simple to rustle up but will have your guests begging for seconds!
Serves: 6-8
Time: Prep 45 mins, Cook 15 mins
Ingredients

6 ripe bananas, peeled and mashed

4 tbsp flour

1 tsp baking powder

Zest of 1 lemon

1 tsp cinnamon

50ml milk

Pinch salt

2 large eggs, separated

Sunflower oil
-
Icing sugar
-
Extra banana

Method

Pop your bananas into a food processor and sift in the flour and baking powder. Add the lemon zest, cinnamon, milk, a pinch of salt and the yolks from your eggs. Blend until you have a nice thick batter and allow to rest for 30 minutes.

When the batter is ready, beat the egg whites until they are stiff and fold them into the batter.

Just about cover the bottom of a frying pan with oil and drop in spoonfuls of your batter, frying until the pancakes are golden on each side. When ready, place pancakes on kitchen paper to drain.

Serve with a sprinkle of icing sugar and a few slices of chopped banana.
