This salad combines some intriguing ingredients to deliver a simple yet delicious dish.
For your salad
1 head green or red leaf lettuce
125g sun dried tomatoes in oil
125g walnuts, chopped
125g Manchego cheese, grated
Rice wine vinegar
Extra virgin olive oil
1. Tear your washed and dried lettuce into pieces and arrange it on a platter or in a large bowl.
2. Slice the sun dried tomatoes into strips, then add to the lettuce along with your chopped walnuts and grated cheese.
3. Drizzle rice wine vinegar and extra virgin olive oil to dress and you're ready to serve.
