Rhubarb Fizz

Rhubarb Fizz

Spring has Sprung with the Rhubarb Fizz. This Rosé fizz based cocktail is incredibly pretty and refreshing.

Ingredients

For the Rhubarb syrup: Combine 8 oz chopped rhubarb, 1 c sugar, 2 c water, 1/4 tsp cinnamon, 1/4 tsp nutmeg and 1/2 vanilla bean in a small pot. Bring to a boil then reduce to a simmer for 5-7 mins. Let cool completely, and strain the ingredients.

  • 1 oz white rum
  • 2 oz rhubarb syrup
  •  1tbsp lime juice and lime zest
  • Nutmeg
  • Mint
  • Freixenet Cordon Rosado Rosé fizz. 

Decoration

Garnish with mint and a thin slice of rhubarb.

Method

Add a bit of nutmeg, lime zest, mint leaves and 1 tbsp lime juice.
Muddle the ingredients.
Add 1 oz white rum, 2 oz the previously made rhubarb syrup and top off with Freixenet Cordon Rosado.
Garnish with some mint or a thin slice of rhubarb.
